今次為大家引入左來自香檳區白丘（Côte des Blancs)一個精品小莊 - Champagne Philippe Glavier 

 

呢個地區入面嘅香檳莊主要係做香檳區最出名嘅「白中白」（Blanc de Blancs)香檳, 意思係佢所用嘅葡萄全部係由白葡萄所釀製。

 

一般香檳會以三種葡萄釀製，包括屬白葡萄的Chardonnay、和屬黑葡萄的Pinot Noir及Meunier，而Blanc de Blancs香檳只以100%Chardonnay釀造，所以喜歡Chardonnay嘅朋友千祈唔好錯過 。Blanc de Blancs的特色是優雅而充滿果香，陳年後會有更多牛油麵包香。其實香檳區種的Chardonnay葡萄只佔1/3左右，而它本身主要用來製作blend的香檳，所以你可以想像Blanc de Blancs香檳的產量其實相對好少。

 

有乜特別？

 

Glavier 係真正純正血統嘅白中白酒莊，因為佢全線所做嘅香檳都只係用頂級田所種嘅Chardonnay來做嘅。係白丘裏面只有極少數嘅growers係咁做。而且Glavier 獲得HVE level 3 認證，代表佢哋喺耕種方式符合對生態環境最高嘅要求。

 

Glavier 擁有52小塊全屬於頂級嘅葡萄田，全面向東或東南（以吸收早上最和暖陽光），分別位於4個不同風土特室特質嘅村莊包括：Cramant, Avize, Oger 及Le Mesnil sur Oger。為尊重唔同風土特質，佢所採用嘅釀造方法，係將不同村莊嘅葡萄分別獨立地發酵陳釀，直至裝瓶之前先至將佢哋根據不同特質調配，咁樣先至可以突出唔同風土所做出嚟嘅香檳。四個村落嘅特性係：

 

Le Mesnil sur Oger：fresh, salty, mineral

Cramant：balanced, creamy, chalky,

Avize: deep and warm

Oger: round and mature

 

所有香檳經過malolactic fermentation 

 

有限供應

 

叫得精品，當然產量極有限。我哋今次引入嘅4款香檳，每年產量最多只係不多過一萬六千支，即2600箱左右，比較Moet 和VCP 嘅2-30,000,000支，大家可想象作比較。
